100% HIGHLAND ARABICA COFFEE

Arabia coffee is one of the highest quality coffees in the world. It tastes fruity and aromatic – Robusta coffee more bitter and tart. Commercial coffee blends usually contain Arabica and Robusta coffee beans. That’s why you might find the taste of a pure Arabica coffee like CAFÉ COMAM a little milder.

The Arabica coffee plant requires special growing conditions, which are found in the highlands of Colombia. At 1,400m – 1,700m, the coffee plants for CAFÉ COMAM have the perfect climate and cooler temperatures that allow the coffee cherries to ripen slowly. The cultivation in traditional, ecological shade cultivation additionally promotes this. This allows the best aromas to develop in the coffee beans.
Arabica coffee beans contain more fats, more sugar and more coffee oils. This makes Arabica coffee taste more pleasant, as it is slightly sweet and contains less chlorogenic acid (bitter substances). This makes it milder overall.

HAND-PICKED AND SUN-DRIED

CAFÉ COMAM is still cultivate ecologically and traditionally in the shade of forest gardens. This climate-friendly cultivation has a positive influence on the quality of the coffee beans. Because coffee quality begins on the finca!

When the coffee cherries are red, they are picked by hand. Freshly harvested coffee cherries are peeled, fermented, washed and then dried in the sun. Poor and inferior coffee beans are constantly sorted out. Only the best coffee beans remain! This makes a big difference in the quality of the coffee. If the farmers have no special buyers, the harvest is not selected and sold to other coffee traders. This coffee is also exported, but no longer as speciality coffee.

Together with the environmental organisation Serraniagua, we focus on quality and pay the coffee farmers not only a minimum price but also an additional premium for their work. 
1 € per pack of coffee goes directly to the environmental organisation Serraniagua. Serraniagua continuously offers the coffee farmers agro-ecological workshops on organic farming as well as quality improvement. This is a win-win situation for the small producers as well as for us consumers.

IT’S THE QUALITY OF THE COFFEE BEAN THAT COUNTS

After oil, coffee is the most important commodity in the world. This also explains the mountains of coffee that pile up in the shops of coffee traders. Here, coffee beans from different fincas and of varying quality come together in one pile. For the sake of economy, conventional coffee beans are usually grown on large plantations without shade trees. This yields more, but leaches the soil through the use of chemical fertilisers and sprays.

With coffee, however, it is the quality of the coffee beans that matters most!
Through direct cooperation, we can be sure that we only get first-class coffee beans from our coffee farmers. For CAFÉ COMAM, we also attach great importance to small-scale and ecological cultivation. In forest gardens, coffee grows in harmony with biodiversity without chemical pesticides. For really good coffee, a forest with other shade-giving trees is indispensable. Only in the shade do the coffee cherries have enough time to develop their full aroma.

WHAT MAKES A SPECIALITY COFFEE?

Coffee is made up of over 800 different flavours! The coffee aroma wheel makes the flavour spectrum of coffee visible. Chocolatey, nutty or berry?
Just like wine, the taste of coffee is somewhat sweeter, more tart or fruity, depending on the variety, cultivation, altitude and climate.  That’s why our different coffees taste a little different.

For Café Comam, we only use Arabica coffee beans from individual fincas that score at least 82 points on the international coffee scale (SCA). This makes it a speciality coffee whose aroma is finer and more balanced and which has special notes in terms of taste.

WHICH PREPARATION METHOD DO WE RECOMMEND?

CAFÉ COMAM develops the best aromas as filter coffee (French Press, Aeropress, Chemex, V60) but also in the mocha pot. With the right settings, CAFÉ COMAM is also ideally suited for fully automatic machines and espresso machines.  
CAFÉ COMAM BLEND is a perfect all-rounder for espresso machines, fully automatic machines or as filter coffee.
